Taking care of a toddler at home isn't an easy job at all. Unlike my older daughter, this little one is more active. He wants to participate in everything I do. Anyway, I managed to find some time to bake some cookies with my favourite nuts CASHEW NUTS !!
Followed the receipe taken from "NEW YEAR COOKIES BY ALAN OOI " receipe book. Although the receipe is APPLE SNAPS, but isn't any apple in it. As usual, I did some amendments to the ingredients & method..
CASHEW NUT COOKIES
originally known as APPLE SNAPS
Makes 82 pcs
Ingredients
125g butter (dice,melted)
70g icing sugar (I reduced to 60g)
1 egg yolk (beaten)
1 tsp vanilla essence
170g plain flour
50g cashew nut powder (I grounded the roasted cashew nuts)
1 tbsp milk powder or custard powder
1/8 tsp baking soda
For glazing
1 egg yolk (beaten)
For decoration
Some raw cashew nuts cut into quarters
Cookie cutter
Method:
1. Preheat oven. Prepare ingredients.
Sift flour, milk/custard powder & baking soda in a bowl.

2, In a pan, spread raw cashew nuts, heat over low fire.
Add in a little butter and stir until fragrant or browned.

3. Ground cashew nut coarsely

4. Beat together butter with icing sugar until light and fluffy.

5. Add in egg yolk and vanilla essence.
Mix well.

6. Pour in flour mixture and ground cashew nut into butter mixture.
Mix well again.

7. Combine until a soft,wet dough is form.

8. Place dough onto floured surface.
Put some flour onto rolling pin to avoid dough from sticking to it.
Roll out the dough flat.
Stamp out with any desired cookie cutter.

9. Leave cookies on lined baking tray.
Press a piece of quartered cashew nut on top.
Glaze with egg.

10. Bake in a preheated oven at 180C for 15-20min until golden brown.

Remove and cool cookies. Crispy and chewy...YUMMY!!
